Golden Pomegranate Vinegar
Here is a subtle amalgam of sweet and sour: the natural flavours of pomegranate enhanced in our kitchens to make this easy to use vinegar.
Pomegranate is a staple flavour of the Middle East turning up in Persian and Lebanese dishes for many hundreds of years. A simple drizzle on cous-cous is generally enough to evoke the exotic Middle East.
This dish features Golden Pomegranate Vinegar and comes from Alison and Barry Ward of Gloucester in the Barringtons of NSW - a salad of chick pea, sweet potato, raisin, coriander, cranberry, cashew and onion. I think it would work with rocket rather than coriander for those that don't like coriander: haven't tried it yet.
This looks like summer to me.
