Balance is everything in cooking, and this subtle blend of Mediterranean herbs and garlic in olive oil brings out the best.

The oil can be used to enhance simple steamed or roast vegetables taking the flavours to a whole new level, or used in some new, creative way.

One of the all-time great winter treats is roast dinner.

The best part of roast dinner is roast potatoes: zapped in the mirco-wave for a few minutes - sprinkle of salt, generous lash of herb and garlic olive oil, then into the over for around 20-30 minutes until the are golden.

Herb and Garlic Olive Oil

This recipe for hummus is from Sarah Campbell:

1x can of chickpeas (+ some brine)
2x garlic cloves
1x tbsp hemp seeds
1x tbsp Belarna Grove
herb and garlic olive oil
1x tbsp tahini 
Juice of half a lemon
Combine all ingredients, including a small amount of the brine from the chickpea can, into a blender and blend until smooth. Garnish with paprika to serve.
