Balance is everything in cooking, and this subtle blend of Mediterranean herbs and garlic in olive oil brings out the best.

The oil can be used to enhance simple steamed or roast vegetables taking the flavours to a whole new level, or mixed with either white or dark caramelised balsamic - the white balsamic is slightly lighter and sweeter - for a salad dressing that clears the plates.

The initial impact is that of the traditional roast dinner - don't be afraid to dribble some over a chicken or duck before roasting. Or with lamb ... or pretty well anything savoury!
