Red Wine and Cranberry Vinegar

Having tried to make a red wine vinegar I concluded it needed a bit of a lift to make it more interesting - so along came cranberries to the rescue!

The light and fresh fruity notes of the cranberry juice lift this fruit vinegar to a new level. The sharpness of the vinegar is tones down by reducing and sweetening - all in all it works really well.

Used on its own as a salad dressing - both a conventional garden salad or something a bit more creative and Mediterranean or with something a little sweeter - more than one chef has used this on their desserts!
