Thickened, reduced and sweetened, this takes humble balsamic to a new level. Rich and thick, my take on balsamic vinegar is sensational on salads and as a dressing, especially when teamed with lemon myrtle, garlic or chilli oil. - WARNING - this stuff is addictive. The combination of caramelised balsamic and tomato is the stuff of legend.
Also: I am reliably informed that caramelised balsamic vinegar and strawberries work well together - never tried it myself but it sounds interesting.
